Pure. West. is the next up in our small batch IPA series. This brew is an ode to old school hop profiles, but balanced with a smooth mouthfeel and hint of haze. We’ve loaded it up with Simcoe, Cascade, and Amarillo. What’s not to love? A nice mix of melon notes and cedar, with a lingering bitterness and a label with extensive Simpsons jokes on it.

Cult Hero was brewed using pilsner malt, oats, and a touch of honey malt. The addition of Cryo Citra and Cryo Columbus hops give this beer an enormous burst of aroma (Think ripe mango and candied peach) with a resinous finish, while Ahtanum hops (new to us!) provide the floral grapefruit flavour!  At 7.8%, this one goes down almost too easy.

This isn’t just a regular stout. This is our first foeder-aged release ever! We added some delicious toasted coconut, some scotch bonnet peppers and some delicious cacao nibs from our good friends at SOMA Chocolate Makers. And just to round things out, we blended a little bourbon barrel-aged stout in for good measure. The final product is something special. It’s a full bodied stout, packed full of delicious coconut aroma immediately. The coconut carries through on the pallet and then the peppers bring in a nice spice. The finish is chocolatey and smooth.

Let’s take a simple 2-row grain bill, load it with oats and wheat, then instead of fermenting with our house yeast strain, let’s pitch a ton of Brettanomyces yeast. Then do a massive dry hop of Citra and Cascade!
The result is a unique flavour profile of sweet pineapple and melon, combined with the subtle funkiness of brett! Expect a nice lingering bitterness and highly aromatic beer. While adding brett ‘post-fermentation’ adds a more funky-barnyard brett character, choosing to ferment a beer primarily with brett lends a less noticeable brett character (who’d of thought…). What we do get is more fruity esters, and just enough brett aromatics to know that the funk is there!
